new post: postmarketOS in 2025-01

About 60% 100% done :)

I plan to finish it up on Sunday Evening / Monday Evening as I find time.

The stuff that is there can already be reviewed (up to the big FIXME marker half-way).

If somebody else wants to push this forward (e.g. writing out the "and what's next" or other section, or improving some of the existing sections with typo/grammar fixes etc.), feel free to do so. Best would be to add separate commits that can be squashed before merging.
