CODEOWNERS: add me as co-maintainer of phosh, gnome and gnome-mobile

I'd already part of the corresponding Alpine groups and also here on pmaports helping these packages.

btw: should i keep the CODEOWNERS file in sync with the comments in the APKBUILD. they look out of sync right now.
