main/postmarketos-base-ui-gnome: update epiphanys user agent
Our epiphany got blocked by https://gitlab.gnome.org/ due to their new AI scraping protection. We used a older User-agent that is not regocnized by their protection and blocked us with "Access Denied.".
Update the user agent used to the current most used mobile user agent with 44.9% share.

Alternative would be to remove this user agent completely since some websites might be biased and e.g. offer users Android .apk's to download, and also does it not work well on desktops which we target aswell.

We had this discussion in the mobile-config-firefox repository. It was concluded that not having "Mobile" in the user agent broke too many websites, see mobile-config-firefox!35 (merged). I'm not sure what we want to do for Epiphany, though.
